Spicy Nigerian Suya Recipe
Serving Size: 6-8 people
Ingredients:
For the Suya Spice Mix:
2 cups roasted peanuts
4 tablespoons ground ginger
4 tablespoons ground paprika
2 tablespoons cayenne pepper (adjust for spice preference)
2 tablespoons onion powder
2 tablespoons garlic powder
1 tablespoon ground cloves
1 tablespoon ground nutmeg
1 tablespoon dried thyme
1 tablespoon salt
1 tablespoon sugar
For the Suya Skewers:
2 pounds beef sirloin or chicken breasts, thinly sliced
Wooden skewers, soaked in water for at least 30 minutes
4 tablespoons vegetable oil
2 tablespoons groundnut oil (peanut oil)
2 tablespoons tomato paste
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons honey
1 tablespoon ground cayenne pepper
1 tablespoon minced garlic
1 tablespoon minced ginger
Salt to taste
Instructions:
For the Suya Spice Mix:
In a dry skillet over medium heat, roast the peanuts until they are golden brown, stirring frequently to prevent burning.
Allow the roasted peanuts to cool completely, then grind them into a coarse powder using a food processor or mortar and pestle.
In a large bowl, combine the ground peanuts with all the other spice mix ingredients. Mix well until everything is evenly incorporated. Set aside.
For the Suya Skewers:
In a bowl, combine vegetable oil, groundnut oil, tomato paste, soy sauce, Worcestershire sauce, honey, cayenne pepper, minced garlic, minced ginger, and salt. This will be the marinade for the meat.
Thread the thinly sliced beef or chicken onto the soaked wooden skewers.
Generously coat each skewer with the prepared marinade, ensuring that the meat is well covered. Allow the skewers to marinate for at least 2 hours, or preferably overnight in the refrigerator.
Preheat your grill or grill pan over medium-high heat.
Grill the skewers for about 10-15 minutes, turning occasionally until the meat is cooked to your desired doneness and has a nice char.
While grilling, sprinkle the Suya Spice Mix generously over the skewers, coating them evenly.
Serve the spicy Nigerian Suya hot, garnished with sliced onions and tomatoes. You can also serve it with a side of spicy pepper sauce or a cooling yogurt-based dip.
