Traditional Spicy Pollo en Jocón (Serves six to eight people)
Ingredients:
2.5 to 3 pounds of chicken pieces (legs, thighs, or a whole chicken cut into parts)
10 to 12 tomatillos, husks removed
2 to 3 jalapeño peppers, seeded and roughly chopped
1 bunch of fresh cilantro, stems removed
1 medium-sized onion, chopped
4 cloves of garlic, minced
2 teaspoons of ground cumin
1 teaspoon of dried oregano
1 teaspoon of salt (or to taste)
1/2 teaspoon of black pepper
1/4 cup of vegetable oil
Juice of 2 limes
1 cup of chicken broth
For serving (optional):
Cooked rice
Warm tortillas
Instructions:
In a blender or food processor, combine the tomatillos, jalapeño peppers, cilantro, onion, garlic, cumin, oregano, salt, black pepper, vegetable oil, and lime juice. Blend until you have a smooth sauce.
Place the chicken pieces in the slow cooker and pour the sauce over them, making sure all the chicken is coated. If needed, rub the sauce into the chicken for better flavor penetration.
Add the chicken broth to the slow cooker. The liquid should partially cover the chicken.
Cover the slow cooker and cook on low heat for 6 to 8 hours or on high heat for 3 to 4 hours, or until the chicken is tender and fully cooked.
Once the chicken is cooked, remove it from the slow cooker and set it aside. Skim off any excess fat from the sauce.
If desired, you can thicken the sauce by pouring it into a saucepan and simmering it over medium heat until it reaches your desired consistency. You can also adjust the seasoning if needed.
Serve the Pollo en Jocón over cooked rice or with warm tortillas. Spoon the sauce over the chicken and garnish with fresh cilantro if desired.
